Kale, Kale, Kale...

I like kale.  I like kale in a salad.  I like kale in a smoothie.  I like kale because it is nutrient dense.  

I first realized how good kale was about 10 years ago while I was in Whole Foods.  At the time they had a sign above the produce listing off different produce its, ranking them for how beneficial and healthy they were.  Kale was at the top.  Until that point I had touted the yummy goodness of spinach, but it was well below kale.

At least once a week I am bringing home a bunch of kale to work with.  I'll post one of my favorite recipes soon.
